Partner Spotlight of the Month: Girls on the Run

In 2010, Eat’n Park Hospitality Group made a commitment to our guests and neighbors through our LifeSmiles program. Over 5 years, we will invest $1 million and 20,000 volunteer hours to organizations and partnerships that impact the health and wellness of children and their families. By focusing on events and programs that get people up and moving or provide healthy eating options, we hope to make an impact in the communities we serve. Every month, we will highlight one of these partnerships here on our blog - and we hope you’ll want to get involved!

This month, we’d like to tell you a little about Girls on the Run.
In over 173 cities nationwide, Girls on the Run (GOTR) is a non-profit prevention program that encourages preteen girls to develop self-respect and healthy lifestyles through running. The curriculum addresses all aspects of girls’ development – their physical, emotional, mental, social and spiritual well-being.

Over a 12 week period, each girl will work with her coach, a carefully selected female role-model from her community, to learn not only about her body through the running training, but to be educated and empowered to make the best decisions in all aspects of her life.

According to GOTR International, their mission is to “inspire girls to be joyful, healthy and confident using a fun, experience-based curriculum which creatively integrates running.”

As a part of our LifeSmiles initiative and commitment to children’s health and wellness, Eat’n Park has teamed up with the Girls on the Run programs in our neighborhoods. Not only through cookie donations on their final 5K race day, but to sponsor participants who otherwise may not have been able to register. We are dedicated to the health and vibrancy of kids, and believe that this program is changing lives everyday.

Introducing The Porch at Schenley, Eat'n Park Hospitality Group's newest restaurant!

If you live in the Pittsburgh area, let us introduce you to the newest addition to the Eat’n Park family: The Porch at Schenley! Nestled in the heart of Oakland, The Porch at Schenley is a come-as-you-are neighborhood bistro serving simple, delicious, scratch-made food using local ingredients.

No, The Porch isn’t Eat’n Park (though you CAN expect the same great service!). Like our other restaurant concept, Six Penn Kitchen, The Porch is a restaurant all its own. Stone oven-baked pizzas with homemade dough, original salads, and mouthwatering meals from the rotisserie are stand-outs that set this new concept apart. To keep the selection fresh and local, the menu will be changing every six weeks.

The Porch offers Brunch, Lunch, and Dinner, as well as weekday breakfast from a convenient walk-up window – which makes it easy to “Pickup the Porch” if you’re on the go. If you’re visiting on a weekday evening, there are Happy Hour drink specials from 4:30-6:30, and all pizzas are half-off after 9:30 PM.

And if you’re looking for atmosphere, especially during warmer weather, you’ll be hard-pressed to find another restaurant that can compete with The Porch. Garage-style doors open the dining room up to a spacious porch (that’s right, The Porch has a porch!) that overlooks scenic Schenley Plaza. It’s the perfect spot to unwind on a warm evening, with a drink in your hand and friends new and old by your side.

Congratulations to Robin Brooks, the 2011 Eat'n Park Caring For Kids Car Raffle Winner!

Back in December, we visited Children’s Hospital of Pittsburgh to pick the winning ticket for the 2012 Ford Focus we were raffling off for our Caring for Kids Campaign. Yesterday, we got to present the winner, Robin Brooks, and her family with the car! What a great day!

Robin and her family are from Youngstown, OH and the 2012 Ford Focus is replacing the Brooks family’s minivan that has clocked more than 250,000 miles. Check out their new ride:

Our new kids’ menu: Helping families make healthier choices

Next time you’re visiting Eat’n Park with your kids, you may notice something different: our new kids’ menu! We’ve made some changes to help our youngest guests learn to make healthy choices when they’re dining with us.

You may recall that we launched our LifeSmiles initiative in 2010. LifeSmiles is our 5-year, $1 million commitment to supporting programs, organizations, and events that encourage families to live a healthy lifestyle. The changes we’ve made to our kids menu are directly in line with those goals. We want to make it easy for kids to put together a healthy meal while still enjoying their favorite foods, and we think our new menu design does just that!

We started by talking to our guests about what kind of information they wanted from the menu, and how we could best communicate that info to their kids. We also took stock of our existing menu choices, while figuring in the FDA’s recommended guidelines for active kids ages 3 -10.

The result: You’ll notice that the menu now resembles a game board with color-coded spaces. After all, healthy eating can be fun! Green spaces indicate healthier choices. For entrees, that means that they’re under 350 calories, and for sides, they’re under 125 calories. Together, a healthy entrée and side will come in under 500 calories – in other words, about a third of the day’s recommended intake.

We’ve also highlighted our delicious salad bar, which, by the way, is a great option for picky kids or those who just enjoy being able to select their own meal. It often surprises us how many fruits and veggies kids will eat when they get to put their own meal together! In addition, we added a new side - a bowl of grapes - and two new sandwiches that are kid-friendly and healthy to boot: A grilled chicken sandwich and a sliced turkey sandwich.

How does this help kids make healthier choices? In addition to having more options to choose from, kids can learn how to pair their favorites (think chicken fingers and pizza) with a healthier side (a bowl of fruit instead of French fries). All of our menu items are now pictured, so kids know exactly what they’re getting, and they’re empowered to make their own selections.

Finally, you’ll notice a reminder that kids have a choice at the end of their meal whether to enjoy an original Smiley Cookie, a Mini Smiley Cookie, or an apple.

It’s our hope that these changes will help empower kids and parents with choices that fit their lifestyle, which will hopefully lead to a lifetime of healthy choices.

Caring for Kids Results & Car Winner!

After weeks of tireless fundraising, our team members have wrapped up our annual Caring for Kids campaign, with results that are nothing short of amazing.

In a mere five weeks, we raised...

This total is the highest in the history of Caring for Kids, and given the fact that this campaign has now been going strong for 33 years, that’s saying a lot!

This year’s contribution has also pushed us over the $8 million mark in donations to local children’s hospitals over the life of the campaign.

No words can express our gratitude to all of the guests and team members who opened their wallets and their hearts for such a great cause. This campaign truly makes a difference in the lives of local children who are being treated at these hospitals.

The Eat'n Park Christmas Star commercial: Nearly 30 years later, it’s still going strong!

We’ve noticed something lately. The holidays have a special quality; one that ensures that much-loved classics will never go away. Our Christmas Star commercial is coming up on its 30th anniversary (can you believe that it’s been running since 1982?), and that got us thinking about traditions and the Christmas season.

At what other time of year are folks tuning in to watch movies that are over a half-century old? It’s a Wonderful Life came out in 1946, and some of the other classics that we all know and love – Rudolph the Red-Nosed Reindeer, How the Grinch Stole Christmas, Frosty the Snowman – came out in the 60’s, more than 40 years ago.

So is it really any surprise that a simple holiday sentiment like our Christmas Star commercial has cemented its place in the hearts of so many? We say no. There are certain things that transcend time, and the Christmas Star, just like those timeless Christmas movies, communicates an everlasting idea that just doesn’t fade. It’s the idea that we’re all in this together – and that by sharing, helping, comforting, and caring, we’re able to make the world a brighter place.

New trends will come and go; 30 years ago, you watched these classics on TV. Who would have thought back then that today you’d be viewing them online or on your phone? Technology will change, but the holiday spirit continues to hold true, as it has for centuries past.

So, as the holidays approach, remember those who could use a special lift. Make a donation, volunteer an afternoon, lend a helping hand, spend a day with someone who has no one to celebrate with. The smallest act of kindness can echo further than you’d imagine. And as you settle in to watch Miracle on 34th Street for the umpteenth time, you’ll know that you’ve made someone’s holiday just a little bit brighter.

A Look Back: 2011 Sustainable Accomplishments at Eat'n Park

At the end of every year I like to take some time to reflect on all of Eat’n Park’s accomplishments over the past year. We’ve had a great year and are really proud of the hard work we’ve done relating to sustainability. (We give ourselves two “green” thumbs up!)

In 2011, we...

Reduced the amount of waste going to our landfills (by recycling)
Accommodated cyclists at some of our restaurants (stop in to fuel your ride!)
Supported our local farmers (who doesn’t love fresh, local produce?!)
Became LEED-certified (think skylights and rainwater barrels)

Reduction of waste going to our landfills

We have been recycling cardboard at our locations for many years, but in January 2011, we instituted a recycling program that includes bottles and cans at 47 of our restaurants. This recycling program represents 384 yards or 24 tons of material annually being diverted away from landfills. We would love to incorporate this element at ALL of our locations, but recycling programs aren’t available in all of the communities that we have restaurants. We continue to encourage more areas to offer a comprehensive recycling program.

Health and Wellness

The Steel Valley bike trail of Allegheny Passage follows the shores of the Monongahela River, through historic battlefields and former steel mill sites in Homestead, Braddock, Duquesne, McKeesport, Glassport and Clairton. When this section of the trail opened in June 2011, we realized that the restaurants we have in the area don’t have places for cyclists to park their bikes. So, we’ve installed new bike racks along the trail next to our Waterfront restaurant location.

We know at this point in time it’s not practical to have bike racks at all our locations, but we’ll install them where it makes sense. At this time we have them at the following locations:

Waterfront – Homestead, PA
Waterworks – Fox Chapel, PA

So if you’re out cycling in Homestead or Fox Chapel and you’re looking for a place to eat, remember that we’ve got a place to park your bike! If you know of other locations that need a bike rack, please let us know. In early spring, we’ll be installing racks at our McKeesport restaurant, which is also along the Steel Valley trail.

FarmSource Local Sourcing

Eat’n Park Hospitality Group’s FarmSource® program, which started in 2002, is thriving today as a company-wide initiative. This year our FarmSource program purchased over $18 million in local foods throughout the communities that we serve. This program encompasses dairy, produce, local artisan producers and meat. One of the great FarmSource successes this year was local cherry tomatoes from Yarnick Farms in Indiana.

We also were recognized nationally for our FarmSource program. This year Regis Holden, our Senior Director of Culinary Services for Eat’n Park received the United Fresh, Produce Excellence in Foodservice award, which honors the foodservice industries most innovative produce performers. Regis received this award for his exceptional work in incorporating fresh produce on our menu and for his engagement in community outreach.

Regis is one the chefs who works with the Community Food Bank on their Farm Stand project. The Farm Stand project is in place to provide low-income neighborhoods traditionally underserved by full-service grocery stores. Each week the one of our chefs complements the produce for sale with nutrition education and weekly cooking demonstrations with recipes and samples using local produce to encourage healthy eating.

LEED-Certified Gold Eat’n Park

Our Fox Chapel Eat'n Park Restaurant in the Waterworks shopping plaza opened last summer, and this year, it became the first restaurant in the city of Pittsburgh to achieve a LEED Gold certification. The restaurant features skylights that amplify natural light, LED lighting, an Energy-Star rated kitchen, barrels to harvest natural rainwater, bike racks, and a wind-turbine system that generates 2,000 kilowatt hours of wind energy a year, which equates to about 1/3 of the annual energy used by an average household.

So, what does LEED Gold Certification mean? Let me explain. Leadership in Energy and Environmental Design (LEED) is an internationally-recognized green building certification system that was developed by the U.S. Green Building Council (USGBC). They have multiply levels for their certification; Bronze, Silver, Gold and Platinum. After the construction of a LEED building it then is evaluated by the USGBC to determine the level of certification, and our restaurant was certified as Gold in June 2011.

On the horizon

So what are we doing now? Through the construction of the Waterworks Eat’n Park, we learned quite a bit about building a green restaurant, and we’re now implementing LEED components into new construction projects. For instance, our newest restaurant, The Porch at Schenley (located in Pittsburgh’s Oakland neighborhood) has many cool green construction components, like a green vegetated sedum roof over a 1/3 of the building and a rain barrel that collects water to be used to irrigate our rooftop garden that will starting growing some of our veggies in early spring.

In September, Eat’n Park was selected to compete in the Pittsburgh Business Times’ “Brand Madness” challenge – along with 63 other local brands. We were up against some very stiff competition over the past few months, but thanks to our supporters, we defeated Kings, Giant Eagle, Brunner, Alpern Rosenthal, and Cranberry Woods Office Park to make it to the championship. In the end, we lost to a Pittsburgh legend, the Terrible Towel.

Even though we didn't win, we’d like to extend a huge Smiley thank you to all our loyal fans who voted for us – we couldn’t have made it to the finals without you!

We just kicked off our 33rd annual campaign, and we're hoping that this year's donation will put us over the $8 million mark in total contributions to local children's hospitals. To hit our goal, we're going to need your help!

Team Smiley fuels runners at Pittsburgh's Great Race

On Sunday, September 25, more than 40 Eat’n Park team members hit the streets for the City of Pittsburgh Great Race. No, we didn’t run it, but we did have a GREAT time volunteering! Our Eat’n Park volunteers passed out water to 14,000 thirsty runners at the Water Station on Blvd of the Allies near Mercy Hospital. Plus, another group of our volunteers greeted runners at the end of the race with congratulatory Smiley Cookies.

We look forward to the Great Race every year and it’s a favorite with our Eat’n Park team members. Our entire Eat’n Park District Management team, including our Senior Vice President of Operations, Mercy Senchur, comes out to cheer on the runners at the Water Station. In fact, this team from Eat’n Park volunteers at this very same Water Station every year. We love cheering on runners with an encouraging word and, of course, a big smile!

History. The mere mention of the word makes some people's eyelids heavy. Well, this is the most interesting history lesson you've heard in a long time...we promise!

Eat'n Park has long been known as the Place for Smiles. One reason is that we want every guest to leave with a smile. But our famous Smiley Cookies have doubtlessly played the biggest role in earning us that nickname.

So then, how did those famous cookies come to be synonymous with Eat'n Park? You'll find the answer below in this fun video that celebrates all things Smiley. You might even recognize a few of our first Smiley Cookie commercials. Enjoy!

Farm Tour 2011 – Late Summer Edition

Last time I posted, it was early July and local tomatoes were just coming into season. As you’re probably well aware, they’re ripe now! On August 10th, I had an opportunity to visit one of the local farms that we work with through our FarmSource program. Brenckle’s Farm has been a long-standing partner of ours. They are great people and grow some unbelievable veggies: tomatoes, zucchini, squash, peppers, eggplant, cabbage and cucumbers.

This year they decided to do something a little different: they built a 5 acre hoophouse. What, exactly, is a hoophouse? Well, it’s similar to a greenhouse in that it’s a structure used to extend the growing season. Made of half-round lengths of pipe, the “hoops” are generally covered by heavy gauge plastic. The biggest difference between a hoophouse and a greenhouse is that hoophouses aren’t heated.

As you can see from the photo , they are still building the structure, but next year, they hope to have tomatoes by the first of July.

One of the primary reasons that we partner with farms like Brenckle’s is because of their innovation. I was talking with Greg Brenckle during our visit, and he said that next year, they are going to be watering their fields with ozonated water. Ozone is an extremely powerful oxidant and disinfectant that kill bacteria and viruses - without the use of chemicals. I look forward to updating you on the progress on this very cool food safety initiative.

While the hoophouse and the ozonated water are very exciting, the high-quality produce grown on this farm is the most important reason for our partnership. We got right into the fields during my visit. The first field that we came to was the tomato field, and I immediately noticed all of the varieties of tomatoes that were growing. San Marzano’s really caught my eye. These are a variety of plum tomatoes that are considered by many chefs to be the best sauce tomatoes in the world. As we continued our tour, I was continually impressed with the variety of produce being grown, and my mind was immediately churning with new recipes I could try at home.

This is the time that local produce is at the height of the season, and I’m taking advantage of it while it lasts – I hope you will too! Be sure to stop by your local farm market to pick up some vine-ripened veggies. And if you should come across any of those famous San Marzano tomatoes, here’s a recipe I think you’ll enjoy.

Fresh San Marzano Tomato Sauce

Ingredients

3 pounds fresh San Marzano tomatoes (or a 28 ounce can of San Marzano tomatoes, if you can’t find them fresh)
1 sprig fresh basil
2 tablespoons extra virgin olive oil (EVOO)
3 garlic cloves, smashed
1 teaspoon sea salt

Cooking Directions

Wash the San Marzano tomatoes and take the stems off.
When the water is boiling, put the tomatoes in the boiling water for 15-30 seconds, until the skin puckers or bursts.
Take the tomatoes out of the water and let them cool on a large plate. When they are cool enough to handle, peel off the skin.
Cut the tomatoes in half and then into about ½ strips. Remove any skin, stem from the inside, and seeds if you want. Coarsely chop the tomatoes.
Put the olive oil and garlic in a cold pan over a high flame. Saute the garlic in the oil to release its flavor. Don’t let the garlic brown. With the oil sizzling, put in all the tomatoes and 1 teaspoon of salt. Add the basil sprigs and stir them into the sauce. They will wilt and release their flavor into the sauce. Cook over medium-high heat until the tomatoes have broken down and a chunky sauce has developed. Most of the tomato water should have evaporated. This should take about 15 minutes, if you a like a thicker sauce, simmer for an additional 15 – 20 minutes. Stirring frequently. When the sauce is done cooking remove the basil and garlic.

Serve over your favorite pasta.

Smiley Lends a Hand at Big Reach Back to School Event

Smiley lent a big hand again this year at Greenford Ohio’s Big Reach Back to School Event on Saturday, August 6th. Smiley helped the Big Reach Center of Hope prepare over 1,000 families for back-to-school by providing kids of all ages with backpack tags and a treat for their new lunchboxes: Smiley Cookies!

Kids even got to spend some quality time with their friend Smiley while they were waiting for their physicals, getting their hair cut, and filling their carts with food and back-to-school supplies. There was a great turnout, and families said that waiting for all the back-to-school festivities was easier because they knew there was Smiley Cookie decorating afterwards!

Overall, the day was a big success and Smiley would like to thank all of the volunteers and families for filling the day with so many smiles!

Let's take a minute to learn a little more about Lanna....

Q: So, it looks like there isn't much you CAN'T do! What's your favorite role at Eat'n Park?
A: I love meeting new people, and I get to do that as a shift manager and as a greeter. But I also like doing prep and working in the bakery - at the end of the day, I feel like I've gotten a lot done. And, it's appreciated by both my team members AND our guests.

Q: So, how fast can you ice a tray of two dozen Smiley Cookies?
A: (Without hesitation) Eleven minutes!

Q: Besides Smiley Cookies, what's your favorite menu item?
A: The Pittsburgh Turkey Sandwich! I'm so glad we brought it back.

A: I like serving – I love taking caring of my customers one on one. I get to make sure they’re happy.

Q: What’s your favorite thing about Eat’n Park?
A: That the company gets involved in the community and really tries to help out. Especially with Caring for Kids – every year, my restaurant holds a Tips for Tots event, as well as raffles to raise money. I love to get involved with the cause.

A: I have two answers to that one! My regular customers, and my 3-year old grandson. He’ll be shouting “Nana!!”

Making healthy eating fun: Fitwits come to Eat'n Park

Beginning on August 1, we embarked on an innovative partnership to talk to kids and their parents about nutrition in a fun, relatable way. We think that an important part of “empowering parents and caregivers with choices” is educating them about those choices. As part of this goal, we introduced the world of Fitwits into our restaurants. Fitwits is an obesity prevention and health literacy research project that uses games and character-driven narratives to transform unhealthy lifestyles into healthy ones.

We’re glad to welcome guest blogger, Kristin Hughes- Associate Professor of Design at Carnegie Mellon University - to tell you about how this program called Fitwits was created and how it made its way to Eat’n Park.

When it comes to educating families about nutrition, we face many challenges. Many children and families lack the knowledge base to make healthy dietary and activity choices. Environmental and social changes, physical inactivity, abundant energy-dense foods and beverages, and poorly understood health education conspire against healthy lifestyle choices. Physicians, parents/caretakers, teachers, community leaders and corporations like Eat’n Park can and should exert a leadership role to help in the fight against obesity. Small changes in people’s lifestyles, choices and habits can make a big difference.

Fitwits first took shape in the Fall of 2007 when a team of concerned Pittsburgh-based designers, doctors, teachers and parents had a conversation about the growing epidemic of childhood obesity and what we could do to help create change. As a team, we worked to developed methods that could help us to understand how people discuss and deal with issues surrounding their own health. We began to look at all facets of the problem in order to identify opportunities for change.

In our preliminary research, some of the most valuable lessons we learned came out of our sessions observing doctors talk to patients about their weight problems. Patients were handed a folder containing charts, contracts, and diagrams to assist them in their daily decisions regarding general nutrition. Unfortunately, the complex language of these materials inhibited their understanding, and thus adoption of the health recommendations, once they left the doctor’s office.

We also found that many misconceptions and lack of knowledge about nutrition came into play when we interviewed families. For example, one interviewed parent, when asked about the number of fruit servings her son has everyday, responded, “he eats cherry and strawberry Jell-O at least four times a day.” In both examples doctors and parents were trying to do good, but we learned that it isn’t always easy to make things that are easy to understand and fun to use.

We began to categorize our findings, which helped us to establish steps for moving forward. We designed games and activities that encouraged people to move physically, exposed them to nutritional concepts, and allowed them opportunities to express what they learned. In doing so, our Pittsburgh coalition framed a health conversation for children, families, schools, community leaders and physicians – “Fitwits.”

Fitwits’ partnership with Eat’n Park gives us the opportunity to relate this important information to families during a pivotal point in their day: mealtime. We’re proud to partner with Eat’n Park and look forward to hearing your feedback about Fitwits.

Team Smiley beats the heat at WKDD Kidz Day

WKDD is known for welcoming music from the 90s, 2k, and today, but on Saturday, July 23rd it also welcomed its good friend Smiley.

At the largest outdoor kids’ event in northeast Ohio, WKDD Kidz Day, Smiley met up with several families who were enjoying all of the fun kids’ activities such as mini golf, crafts, moon bounces, a petting zoo, spinning rides, and music. Smiley even found his kangaroo pals Kenny from Kennywood and Zippy from the University of Akron to share some fun with.

The Cookie Cruiser was also a hit, allowing guests to show off their artistic abilities through cookie decorating or enjoy a tasty original Smiley Cookie.

Even in the heat, Smiley and his friends had a terrific day and would like to thank everyone for making it a memorable trip to Green, Ohio.

Smiley rings in Independence Day at Moon Park

Red, white and Smiley! The Fourth of July was a great day for Smiley as he rang in Independence Day at Moon Park's annual celebration. It was a special event as Eat'n Park's very own Sarah Marince took the stage to perform, along with several other great acts. Sarah and Smiley were a huge hit and both had many loyal fans in attendance cheering them on.

Before the fireworks display, Team Smiley distributed a very special treat. We handed out thousands of festive red and blue smiley cookies to the very excited children who eagerly formed a line at our tent. The night was capped off with a vibrant show of fireworks. It was a fantastic event and was definitely a highlight of the summer!

Smiley and the S.S. Cupcake: Anything That Floats 2011

Who doesn’t love cupcakes? I’m not sure, but I do know that Smiley DOES love cupcakes. So to celebrate his 25th birthday, it only seemed fitting that we would build a giant cupcake and take it sailing on the strong waters of the Allegheny River… makes sense, right?

Under the careful supervision of trained adults (not really), we dusted off our power tools and hammers to build the second generation Eat’n Park float for the Pittsburgh Regatta’s "Anything that Floats" contest on July 3rd. It featured the biggest cupcake I’ve ever seen, as well as a larger-than-life Smiley Cookie…all atop a foundation of Smiley icing buckets. After a day of hard work, lots of sweat, and only a few tears, the S. S. Cupcake was ready to set sail!

Now, you must be wondering if it did, in fact, float. Well my curious cookie-loving friend, IT DID! Thanks to the strength and endurance of my fellow crew members, we successfully floated from PNC Park to Heinz Field. Not only were we the third place finishers, but we were also awarded with a trophy for being the Best Decorated Float! My arms are still a little tired, and I should have used more sunscreen, but at least this cupcake didn’t crumble!

Farm Tour 2011 - Summer Edition

If you recall my last posting, Spring Farm Tour 2011, you’ll remember that I was wishing away the endless rain that fell almost daily during spring. Well, the rain has finally stopped, and the farmers have been hard at work. Those soggy days of April and May have passed, and they’ve been replaced with fields of veggies. It’s quite amazing to see the transformation. I really felt the rain was going to slow down the start of local produce. Boy, was I wrong.

On June 30, I visited with Dan, Lynette and their son Joey at Yarnick’s Farm in Indiana, PA. The Yarnicks are some of the nicest folks you every wanted to meet, and they’re not bad farmers either. I arrived at the farm and was greeted by Dan. He took me up to their home where Lynette was busy preparing breakfast. We had eggs, hand-formed sausage patties, and potatoes with hot peppers and assorted tomatoes. If Lynette ever decides to open her own restaurant, we’ll cross our fingers that it won’t be anywhere near Eat’n Park!

The Yarnicks’ farm is one of the most advanced and innovative farms that I’ve visited. They’ve instituted some very creative farming techniques that delivery high quality and great tasting vegetables. In fact, these high-tech farming methods allow the farm to have vine-ripened tomatoes 10 months out of the year and the earliest, freshest, sweetest corn a full month before other area farms. Believe it or not, that’s me eating fresh corn in the field in the photo below. The old corn standard, “knee-high by the Fourth of July” certainly doesn’t apply here!

During an earlier visit back in May, Dan gave me a sneak peak at some of the innovations his family uses to deliver such early crops. One of these innovations was the use of plastic blankets, which keep the plants and ground free from frost. Of course, this isn’t cheap, but it allows the Yarnicks to get 2 and sometime 3 crops planted and harvested in one growing season.

I know what you’re REALLY wondering: How on earth do they get ten months of vine-ripened tomatoes in Pennsylvania’s climate?? Well, let me explain. Not only do the Yarnicks grow crops in their fields, but they also have an extensive and elaborate system of greenhouses. In mid-February, the Yarnicks start many of their crops in these greenhouses, then later transplant them to the field.

In addition, to get some of those early veggies, Dan grows some crops hydroponically. Hydroponic means that they are grown without soil in a nutrient-rich water solution in a controlled environment. While the Yarnicks also grow tomatoes in their fields, the addition of hydroponic growing allows them to plant and harvest tomatoes for a much longer period of time. This is truly a competitive advantage that separates the Yarnicks from other local farmers.

Right now, they’re only growing enough of these tasty tomatoes to supply their own farm market, which is located on site at the farm. However, thanks to the Yarnicks’ innovation, they’re able to supply Eat’n Park restaurants with local cabbage, zucchini, and yellow squash before July. We’re fortunate to be working with the Yarnicks, and I’m looking forward to seeing what new farming techniques they’ll try next!

Fans share fond memories in honor of Smiley's 25th birthday

In honor of Smiley's 25th birthday this summer, we asked our email club members to share their favorite Smiley memories. Here are a couple of the responses we received. Enjoy!

From Mary S. of Crystal River, FL:

"I know you are wondering what Smiley cookies have to do with Florida, so let me tell you our story. We moved to Florida in January of 1988 from Butler - obviously, we went to the Butler Eat'n Park at that time. Our oldest daughter was born in 1982 before Smiley was born, and our youngest daughter was born in 1987, just after Smiley came along. But our oldest daughter got to enjoy Smileys on each visit to the Butler Eat'n Park for the two years that Smiley was around. It was a real treat. Our youngest had not yet tasted her first Smiley because we moved to Florida.

Fast forward to today. Because my husband and I are Pittsburghers at heart, born and raised, on every trip back home, Smiley's were a must - not just for consuming during our visit, but also to bring home with us. If the whole family was not going to Pittsburgh, then the person travelling better not come home without the Smiley Cookies, or else!!! We have enjoyed them for years, and when we come back to Pittsburgh now, we stay with our nieces and get our Smileys at Bethel Park or Penn Hills.

For the Super Bowl in February 2011 against the Packers, the mini Steeler Black & Gold Smileys got shared with our church choir. One of our choir members is from Wisconsin, so she brought cheese curds to support her Packer team. The cheese curds were tasty, but cheese curds don't smile! Even though our team was unable to bring home #7 this year at least our Pittsburgh Smileys brought smiles to all of my choir friends. Basically, we love our Smileys and generations of our family and extended family hope to keep enjoying them for another fifty years. We'll either come get them up your way, or order them online. Personally, we love coming home to our roots and selecting our own Smileys.

So to all at Eat'n Park who create these wonderful memories, Keep on Smiling! Thanks to those wonderful Smiley cookies, we'll keep smiling! I'm sure #7 isn't far off. Go Black & Gold!!! We luv yinz guys!!"

"First off HAPPY 25th!!! It's hard to believe it's been that long. : ) My daughter who just turned 30 this year has loved the cookies from day one. Who of us hasn't snuck a bite of our kids cookie just to make sure they were ok for them to eat (wink wink - we just wanted a taste of our own when it came to the table). We have taken these cookies far and wide, on vacations and to celebrate graduations, including eating them after the March of Dimes walks (thanks again for the support) and other events."

Smiley's 25th Birthday Party Rocks the Carnegie Science Center!

Smiley has just passed a major milestone: he celebrated his 25th birthday this Saturday at the Carnegie Science Center! Smiley had been anticipating his big party for months, and it was worth the wait.

To celebrate, the first floor of the Science Center was decorated with balloons, streamers, banners and party hats. Not only were Smiley’s adoring fans there, but so were his mascot friends! The Pirate Parrot, Pitt Panther, Kenny the Kangaroo and the Nittany Lion were just a few of Smiley’s friends who made an appearance.

In addition, plenty of families and kids came out to celebrate Smiley’s big day! Everyone enjoyed cookie decorating, smoothies and, of course, birthday cake. Lead by Pittsburgh's own Sarah Marince, partygoers even sang "Happy Birthday" to Smiley.

The party turned out to be even better than Smiley could have ever imagined! He wishes to thank everyone for coming out and sharing this special day with him. He can't wait to celebrate another 25 years!

Batter up! Team Smiley visits Cleveland as the Indians take on the Pirates

Team Smiley kicked off Smiley’s 25th Birthday at the Cleveland Indians' game on Sunday, June 19th. The Indians faced off against the Pittsburgh Pirates, so it really was a hometown rivalry. In celebration of Smiley's birthday, Team Smiley passed out a little gift to all of the exicted baseball fans: cool Smiley wristbands!

Smiley himself made an appearance, dancing to Radio Disney and taking pictures with Indians' and Pirates' fans. He even had the opportunity to hold the finish line on the field as the Hot Dogs raced at the top of the sixth inning. Smiley cheered for all three of his Hot Dog friends: Ketchup, Mustard, and Onions, as fans cheered on their favorite condiment as well.

Making Learning Fun! Team Smiley visits the Carnegie Library Summer Reading Extravaganza

What an exciting day we had! Team Smiley was ecstatic to be involved in the 11th annual Summer Reading Extravaganza hosted by the Carnegie Library. This was the team’s first big event of the summer. We could not have imagined a better way to spend the beautiful Sunday afternoon than with hundreds of children excited about reading!

The Extravaganza is a very cool event that encourages summer reading and helps the library deliver learning opportunities to citizens of Pittsburgh. Everyone had an awesome time and our cookie decorating station was a huge hit among the crowd. Our guests creatively decorated over 1000 cookies ranging from the traditional smiley face, to cookies decked out as characters from their favorite books. Our team also distributed over 3,000 additional cookies!

It was a great day for everyone, especially Smiley who was overjoyed to pose in pictures with his fellow lovers of reading! We had an amazing day and were so happy that we were able to celebrate such a fun event with all of you!

Artist Burton Morris Partners with Eat’n Park for Smiley’s 25th Birthday

Last Thursday was an exciting night for Eat’n Park. That’s because renowned artist Burton Morris unveiled a very special painting: his own rendition of our Smiley Cookie! We wanted to do something really special for Smiley’s 25th birthday, and when we asked Burton to be involved, he was thrilled.

He revealed his bright, cheerful design at Pittsburgh’s Andy Warhol museum – a fitting location, because not only has Morris’ work been compared to Warhol’s, but like Warhol, Morris is also a Pittsburgh native.

Burton developed the design over a three-month period as he translated Smiley into his signature “post-pop” style. His artwork is known for its bright colors and energy – much of it portraying images that people relate to in everyday life. Smiley and a bunch of his mascot pals will rendezvous at the Carnegie Science Center in Pittsburgh for a birthday bash you won’t soon forget! Smiley makes new friends at the Special Olympics Summer Games

On Friday, June 10th, Smiley and his team had the pleasure of attending the Special Olympics of Pennsylvania Summer Games. For the event, Team Smiley loaded the Cookie Cruiser with dozens of cookies and traveled to State College, Pennsylvania.

This truly special event was not only rewarding for the athletes, but also for the parents, volunteers, and Team Smiley as well. In between events, athletes and other participants stopped over to the Cookie Cruiser to decorate their own cookie. All the while, Smiley walked around the event making life-long friends.

It was a great day for everyone who attended, and we're looking forward to returning next year. Congratulations to all the participants of the Summer Games!

Smiley is celebrating his 25th anniversary this year, and he’s doing it in style. He recently visited our Waterfront restaurant to unveil a surprise – A statue of himself, right in the lobby! Though lacking Smiley’s charisma and huggable charm, his look-a-like definitely sports Smiley’s dashing good looks – you can barely tell them apart!

The statue was created by Ron Seman of The Object Works, right here in Pittsburgh. Ron’s company has also designed some really cool models for movies, TV shows, and ads – click here to see some of their work. We’ve worked with Ron before – in fact, he designed several pairs of giant sunglasses for Smiley to wear during his first beach party. It was only natural that Ron be the one to create Smiley's double!

Smiley’s statue isn’t the only surprise in store for the summer. Stay tuned to see what else is happening to commemorate Smiley’s quarter-century milestone!

Summer is heating up, and another season full of festivals, fundraisers, and community events is just beginning for our newest team members: Team Smiley.

Every year, a group of fresh new faces joins us to take Smiley and his Cookie Cruiser on a summer tour. You might find them at a charity walk in your neighborhood, or maybe you’ll see them at one of our restaurants, or perhaps you’ll cross paths at a local festival. Wherever you meet them, you can be guaranteed one thing: you’ll walk away with a smile!

They’ll be blogging about the events they visit, as well as sharing their photos in our photo gallery throughout the summer. But who are these die-hard Smiley dynamos? Well, read on!

Hi, my name is Judy and I am majoring in marketing and public relations at Baldwin-Wallace College, near Cleveland, Ohio. My hometown is Center Township, northwest of Pittsburgh in Beaver County. Team Smiley visits Walk Now for Autism Speaks

Although he never spoke, Smiley made his voice heard at Walk Now for Autism Speaks 2011.

On Saturday, June 4th, people of all ages came together to walk and support autism research at Heinz Field. Smiley's Cookie Cruiser arrived filled with Smiley Cookies, providing walkers and their families with not only a tasty snack, but also the chance to decorate their own yummy treats to show off their artistic abilities. Throughout the day, Smiley had the opportunity to meet guests and even see some of his fans from Pitt.

It was really moving to see so many people come together in support of such a great cause at Heinz Field. We had an amazing day and got to meet so many incredible families. Thank you to the thousands of individuals who came out and participated in Walk Now for Autism Speaks and made our day so enjoyable!

Baked Chicken Bruschetta Alfredo - Eat'n Park's "Best New Recipe" Contest Winner!

If you happen to be driving into Pittsburgh by way of McKnight Road, you will see a small Eat’n Park on your right. Next time you're in the area, be sure to take the time to stop in and say hello to one of our most creative cooks, Rachel Welch.

We call that restaurant #13, but it was a lucky number 13 for Rachel, who was recently named the overall winner in our Best New Recipe Contest.

The contest began last July and was open to all of our 1,251 cooks. Each cook with a new recipe idea prepared that dish for the management team in their restaurant. That team of managers chose the best recipe to represent their restaurant against all the other restaurants in their region.

One winner from each of our seven regions was chosen. Now the seven regional champions ventured to our test kitchen in Homestead to personally prepare their best new recipes for our panel of judges, including celebrity judge Shelley Duffy from the Star 100.7 morning program.

In the end, Rachel came out the victor. Her creation, Baked Chicken Bruschetta Alfredo, made it through the testing process and became the first dish chosen to be featured as a special at Eat’n Park Restaurants.

Rachel's idea is a great twist on one of last year's summer favorites. She took our Baked Chicken Bruschetta and sliced it over a bed of spaghetti. The addition of bacon, a creamy Alfredo sauce, and our homemade bruschetta topping made this dish a winner!

Miles of Smiles at the Pittsburgh Marathon

“This is the reason I run this race!”

That’s a sentiment that we heard over and over again last weekend as we handed out 20,000 Smiley Cookies to exhausted runners at the Pittsburgh Marathon. Flattered doesn’t begin to describe our reaction – running 26.2 miles for one of our signature treats is quite a compliment!

Though race day dawned dreary and wet, the runners weren’t deterred by the rain, and neither were we. At 3:30 AM, our 20,000 cookies were delivered to the tent we occupied just beyond the finish line in front of Heinz Field. Soon after, our team of 17 volunteers and Team Smiley began bagging them individually in preparation for the flood of runners we’d be seeing later that morning.

By 8:30 that morning, ALL of the cookies were ready to go – good timing, because that’s when the first of the runners began to cross the finish line. The first finishers had run the half-marathon – and despite the rain and physical exertion that had just endured, they were all smiles.

Gradually, the rain cleared up and we began to see runners who had finished the full marathon. What an accomplishment! It was almost unbelievable to see how many people had turned out for the race. In all, there were more than 4,200 finishers in the full marathon, and nearly 9,000 in the half. Together, they ran more than 220,000 miles that day. That’s enough to circle the Earth – NINE times!

We were happy to be a part of such a great event, especially with our vow to promote healthy lifestyles through our LifeSmiles program. It was truly inspiring to see so many people who had made the commitment to train and participate in the race. We can’t wait for next year!

Spring Farm Tour 2011

Rain, rain, go away – PLEASE! Ok, maybe you can come back some other day. We do need rain for crops to grow, but this is a little ridiculous. When is it going to stop raining? On the other hand, I hate to complain about getting rain because I know that come the middle of summer, I’ll be praying for it.

I kicked off my spring farm tour a couple weeks ago, and the rain was on everybody’s mind. So I looked into our average rainfall for April - it’s typically 3.01”, but this year, we received close to 10” – and it looks like we’ll finish out May in pretty much the same fashion. For local farmers (and their customers), that’s bad news, because it’s pretty hard to plant your crops when the soil is so wet. As a result, local produce will likely be a little late this year.

Getting back to my farm tour…this year, I had a couple companions with me as I made my rounds. I was joined by my boss, Brooks Broadhurst, and Eat’n Park’s CFO, Dan Wilson. Both of these guys understand what bad weather does to our business. However, it’s hard to really understand how it impacts farmers until you see it firsthand. Luckily, aside from the rain, our farmers had mostly good news to report.

Dawson’s Orchards

Our first stop was to Dawson’s Orchards in Enon Valley, PA. You might remember my trip there last fall, in the middle of harvest season, when the trees were loaded with apples. This time, they were in the midst of pruning their apple trees, which keeps the trees healthy and aids in an abundant production of fruit in the fall. They were also planting white and yellow peach trees. Although their peaches won’t be plentiful this first year, as the trees mature, you may end up seeing fresh local peaches at an Eat’n Park near you.

Riverview Farm and Rippling Brook Farms

After lunch, we headed north to two farms along the Clarion River. One is called Riverview Farm, owned by Sam Byler, and the other is Rippling Brook Farms, owned by Aaron Schwartz. You might remember Aaron’s name from reading about him here on our blog –he’s a great example of a success story that’s come from our FarmSource program. Both of these farmers are Amish and they produce some great products. Sam produces goat cheese from the milk that he receives from his herd of goats. While we were there, we had the opportunity to sample his Goat Cheese Feta, which I have to say was quite good.

After we left Sam, we stopped over at Aaron’s and had an opportunity to see his ice house. Remember, these guys don’t have the luxury of electricity and plumbing, but trust me, they get by just fine. Aaron is a vegetable farmer and in the heat and sun of the summer, vegetables have field heat. What does that mean? Well, it means that unless the vegetables are cooled soon after harvest, their quality will begin to deteriorate quickly, making them less viable for market. So, Aaron needed to find a way to cool his produce before it was shipped to market. Solution: the ice house.

Last year, I visited Aaron in September, and the cooler in which he stored the ice was 35 degrees. Not bad for having no electricity. So you might ask, “Where does the ice come from?” With no electricity, he’s certainly not making ice cubes in the fridge. The answer lies in the placement of the ice house – which happens to be built in front of a pond. In the winter, when the water freezes, he cuts the ice into large cubes and stacks it in the cooler, essentially building an ice house. Pretty cool, right?

Brenckles Farm and Greenhouse

Our final stop was to Eat’n Park’s 2010 Supplier of the Year, Brenckle’s Farm and Greenhouse. Among other veggies, like corn on the cob, they supplied us with over 50% of our tomatoes last year. Our visit with Brenckle’s was a little different than the other farms, since they actually had something growing – not in their fields, but in their greenhouses. A big portion of this farm’s business comes from selling plants to the general public, so not only were their vegetables in the greenhouse, but also flowers - and a ton of them at that. I guess April showers actually did bring May flowers!

This year, we’ll again be looking to Brenckle’s for the majority of our tomatoes. Additionally, they’ll be providing us with zucchini for our breaded zucchini appetizer, as well as cucumbers, green beans, and yellow squash.

As I’m sitting here writing this post, all I hear outside is rain hitting our metal roof of our office building. After my visits, my fingers are crossed that our farms have had an opportunity to get some crops in the ground between the rain drops. I’m looking forward to some fresh local produce!

Eat’n Park Receives Restaurant Neighbor Award for Commitment to Community Service

We are very excited to announce that the National Restaurant Association has presented us with its 2011 Restaurant Neighbor Award! What makes this such an honor? Well, two things. First, this is a national award, and we were selected from ALL of the restaurants in the country! Second, and most important, we were selected because of our fundraising efforts through our Caring for Kids campaign – something that our team members have put an enormous amount of time and dedication into. To be nationally recognized for something that is so important to our culture here at Eat’n Park is truly a credit to our entire organization.

Since 1979, our restaurant team members have poured their hearts into raising money for local children’s hospitals. In those 31 years, the campaign has raised more than $7 million for sick children and their families. Yesterday, several of our team members attended the award ceremony in Washington, D.C. to accept the honor on our behalf. The video below was shown at the event.

The Restaurant Neighbor Award is given to companies that demonstrate outstanding service efforts in the communities that they serve. The award was developed in 1999 to inspire more restaurant owners and operators to get involved and contribute to their respective communities. We’re happy to say that by that time, we’d already been running our Caring for Kids campaign for 20 years!

Over the years, this campaign has evolved into a program that we are incredibly proud of. There’s one reason for its continued success: our amazing team members. In good economic times and in bad, our team members have rallied together through this campaign to support their communities. Last year, they contributed over 4,000 volunteer hours during the campaign’s five-week span.

While receiving this award is truly an honor, all that really matters is that we’re making a difference in the lives of the people in our communities who support us every day. It’s one way that we live up to our name – “The Place for Smiles.”

Community-Supported Agriculture

With spring rapidly approaching, many farmers are getting ready to plant the crops that they’ll harvest this summer and fall - which got me thinking about CSAs. CSA stands for Community-Supported Agriculture, and it’s a great way for consumers like you and me to get a great bounty of fresh, local goods while supporting farmers in our own communities.

Here are the basics: a farmer offers a certain number of "shares" to the public. Typically the share consists of a box of vegetables, but other farm products may be included. Interested consumers purchase a share (aka a "membership" or a "subscription") and in return receive a box of seasonal produce each week throughout the farming season.

What’s in the box will vary depending on the farmers involved in each CSA. Here at Eat’n Park’s Corporate Support Center, we participate in the Penn’s Corner CSA. Penn’s Corner is a cooperative of over 30 local growers, including some of the farms that supply Eat’n Park restaurants with fresh fruit and produce. Because Penn’s Corner is comprised of so many different farmers, our weekly boxes contain not only a wide variety of local herbs, veggies, and fruits, but also the occasional jar of honey, pack of fresh pasta, gourmet mushrooms, local cheese, or free range eggs.

But Penn’s Corner certainly isn’t the only CSA available in this area. Last Friday, I was out visiting farms when I came across Janoski Farms in Clinton, PA. This farm has been in operation since 1890, and currently includes thirty-five greenhouses, a retail farm market, a farm bakery, a garden center, orchard, gift shop, country restaurant and over 200 acres of vegetable production. The Janoski’s recently decided to start a CSA, which will run from June through November, and will take advantage of the many vegetables and fruits already grown on the farm.

In addition to enjoying fresh, local produce, another great benefit to CSA membership is the opportunity to try vegetables that you otherwise wouldn’t have considered. Many CSAs, including Penn’s Corner and Janoski’s, provide recipes that incorporate the week’s bounty. You may just discover a new favorite meal!

With this jovial holiday coming up, we got to thinking about St. Patrick’s Day, Shamrocks, and all things Irish. Our curiosity turned up a few fun facts about the holiday and its icon, so we thought we’d share. Read on for green enlightenment:

The very first St. Patrick's Day parade was not in Ireland. It was in Boston in 1737.
There are 4 towns in the U.S. named after a shamrock: Mount Gay-Shamrock, West Virginia; Shamrock, Texas; Shamrock Lakes, Indiana; and Shamrock, Oklahoma.
According to the Guinness Book of World Records, the highest number of leaves found on a clover is 14.
One estimate suggests that there are about 10,000 regular three-leaf clovers for every lucky four-leaf clover.
Legend says that each leaf of the clover means something: the first is for hope, the second for faith, the third for love and the fourth for luck.

Irish Soda Bread

Ingredients:

2 cups white flour
2 cups whole wheat flour
1/2 cup sugar
2 tsp. baking soda
1 tsp. salt
4 tbsp. butter, chilled
1 cup raisins
1 1/2 cups buttermilk or plain yogurt

Instructions:

Heat the oven to 350 degrees. In a bowl, combine the dry ingredients.
Cut in the butter until it is pea-sized. Stir in the raisins and buttermilk or yogurt. Turn the dough onto a floured surface, knead 1 minute, and shape into a disk.
Cut an "X" in the top and bake on a greased baking sheet for 45 to 50 minutes. Makes one 8-inch-wide loaf.

Lent is fast approaching, and I’ve always wondered how it’s determined when Easter and Lent will occur. So, my friends, I did a little research – and I’m here to tell you how it’s done. Stay with me now, because this gets a little complicated. Easter Sunday is always the first Sunday after the first full moon following the spring equinox. Count backwards 40 days from that day, and you have Ash Wednesday, which is the official start of Lent. Or you can do like I always do - just check the calendar!

Either way, in this region, Lent means that it’s time for Friday fish fries, pierogie dinners, haluski, and the new specials at Eat’n Park. This year, our lineup is better than ever. You will see the return of old favorites like the Tuna Cheddar Melt and Pierogies with onions, but we’re also adding a few brand new items that I’m sure you’re going to love.

The first is our Grilled Salmon Burger. It is made of premier flaked salmon and grilled to order. We serve it to you on our grilled Kaiser bun with spring mix lettuce, a touch of chipotle ranch sauce, and your choice of a side.

Our second new addition is our General Tso’s Shrimp. We start with a bed of stir-fried brown rice and a blend of garden fresh vegetables grilled to perfection. We then toss our golden-crisped popcorn shrimp in our General Tso’s sauce and serve it on top of the rice and veggies. What a treat!

Now, for your second lesson today: Who is this General Tso, and why can his namesake meal be found in every Chinese restaurant in America? Well, General Tso’s real name was Zuo Zongtang. He lived in the Hunan Province of China in the 1800’s and played a key role in stopping a rebellion in 1860. Legend has it that this sweet and spicy specialty was his favorite dish. However, no historical proof of this exists, and in fact, there is no record of such a dish in Hunanese cuisine. It appears that the first instance of General Tso’s chicken actually appeared in New York in the 1970’s, thanks to the creativity of several Taiwanese chefs who had opened restaurants in the area. There have been endless variations ever since.

Regardless of its origins, here’s what I’m betting: You’re going to love our version of General Tso’s! Stop in this Lenten season and give it a try.

"What does Team Smiley do?"

When asked what Team Smiley interns do for the summer, I can come up with an answer pretty quickly; they act as Eat’n Park’s brand ambassadors in the community. I know this, because for the 2009 summer, that was me. When asked what my time on Team Smiley taught me, I have a much harder time summing it up.

See, Team Smiley is about much more than smiling sugar cookies, community festivals, a sweet ride, sock tans, and paychecks (though those are all really nice). Plus, Team Smiley has a lot of fun, and it shows. But believe me, there’s more than meets the eye.

You learn to plan for events (as much as you can plan for an event!) and when that doesn’t work, you learn to go with the flow and be flexible. Nothing can stop us (including weather) from handing out those iconic cookies and getting to know our guests. All it takes is watching one kid decorate their own cookie (lots of icing, of course!) and take a big bite to understand why we love our jobs.

It’s probably pretty safe to say that any high school or college student has once been a part of a team. But it’s probably also safe to assume that the team wasn’t together for almost 40 hours a week. When you spend that much time together, you quickly learn each other’s strengths and weaknesses and, as a team, how to use them to your advantage. That’s not to say we always did the same thing – every day our role was different. We shared the work and we shared the responsibility. I know most internships don’t offer that.

Looking back, I remember walking into my Team Smiley interview a nervous, absurdly over-energetic college student looking for a paying job that didn’t require getting people to sign up for credit cards. But after my summer with Smiley’s Cookie Cruiser, I learned how to work with new people, plan for the unexpected, use my “inside voice” in a corporate setting, and positively engage in dialogue with guests. And boy, did that come in handy! Upon graduating from the University of Pittsburgh last May, I accepted the position of Community Marketing Assistant for Eat’n Park. I now have the honor of overseeing the program that taught me so much. My passion for Eat’n Park is as strong as ever and I’m still overly energetic, but now, I’m a professional in the making.

From Costa Rica to Eat'n Park: Our Coffee

Coffee is one of those beverages that you either love or hate. I had my first coffee experience when I was 18 floating around the Atlantic Ocean in the Navy. I couldn’t stand coffee at first, but over time, I grew quite fond of it. 4:30 AM comes mighty quick, and coffee was the one thing that I could look forward to every morning. Regardless of where or when you had your first cup of joe, coffee has become an important part of many peoples’ morning rituals.

Because our coffee is such a customer favorite at Eat’n Park, we wanted to be able to tell our guests where and how our coffee is grown.

Our coffee comes from Costa Rica and Guatemala, both established coffee-growing regions. The company we source our beans from has been in business since 1967. They have well-defined standards in regards to planting, growing, harvesting and employee well being. In February 2010, I had the pleasure of visiting one of their plantations, Hacienda La Minita in Costa Rica. My primary focus on this trip was to become more knowledgeable about where our coffee is sourced.

La Minita is located about 1½ hours drive south of San Jose, in the coffee producing area called “Los Santos.” The plantation consists of a total of 1,200 acres of land, of which 680 acres are currently in production.

Planting

In any given year, La Minita harvests from approximately 2,500 trees per acre on the farm, depending upon the geography of the area being planted and the variety of tree used. This results in a total of about 1,700,000 trees on the farm. As the trees age, older trees are gradually replaced with new trees from the farm’s nursery. In a typical year, about 150,000 new trees are transplanted from the nursery.

Growing

The growing season begins with the first rains of the year, which normally occur sometime between the end of March and the beginning of May. The timing of the first rain is essential, for it is the rain that signals the tree to begin flowering.

Approximately ten days after the initial rains, small honeysuckle-like flowers form on the trees. The flowering is of critical importance to the coffee crop, for the node where each flower formed will produce a single coffee cherry, and within this cherry are the coffee seeds which will become the coffee bean. If the flowering is adversely affected by the weather, pollination wil not occur, no cherry will form, and there will be no coffee.

From the onset of the initial rains, they enter into seven month of rainy season, when the farm sees four to six hours of rainfall every day.

With the end of the rainy season comes the ripening of the coffee cherries. The large green cherries begin to turn either red or yellow as they gradually ripen. Because not all of the cherries ripen at once, most trees are picked up to 5 times to harvest all of the fruit.

People

La Minita has a core of 80 full time employees, augmented by an additional labor force of about 600 people during harvest season. All of the farm’s full time employees are provided housing for themselves and their families on the plantation.

The plantation assists their workers by actively supporting them in their lives outside of working hours. They contribute matching funds to the workers’ association savings plans. Additionally, a medical clinic is located on the farm near the administration building, and a doctor and dentist are on site several days a week to attend to the needs of the workers and their families.

After seeing the source of our coffee firsthand, I was thoroughly impressed not only by the care taken to produce a superior-quality coffee, but also by the farm’s efforts to provide a safe, comfortable environment for their workforce. Though I was already a fan of the coffee we serve, my experience visiting La Minita gives me a whole new appreciation for it.

2011: New Year's Resolutions at Eat'n Park

Another year has passed us by, and it just wouldn't be right if we didn't ring in 2011 with our New Year's resolutions! Here's what you can expect our contributors to be working on and blogging about this year.

With a new year comes new goals and new challenges, and with the right amount of hard work and a little luck, new successes. Looking back at 2010, I am very pleased with the progress I made in meeting my resolutions, and I’m excited to share my focus for the coming year.

First, I’ll continually be looking for ways to make our menu selections just a little healthier. For starters, we plan to reduce the sodium content of our menu selections by focusing primarily on three items: turkey, bacon, and cheese. These three ingredients can be found in many of our recipes, and by sourcing and testing a high quality, low sodium replacement, we will be able to add a health benefit to our guests, while maintaining the great taste you expect in our food.

As you probably already know, we are very committed to accommodating our guests with special dietary needs. Two years ago, we introduced a groundbreaking allergen program that provides a higher level of comfort to guests with food allergies when they’re dining in our restaurants. We have even sourced gluten-free buns for those suffering from celiac disease. As a continuation of that program, look for us to test and introduce a great gluten-free dessert that will be universally enjoyed by all of our guests.

Last year, we launched our new LifeSmiles program, which is aimed at helping families make healthy choices. As a part of that program this year, I’ll be working with the Greater Pittsburgh Food Bank to conduct cooking demonstrations at local farmers markets. I’ll also be working with local schools to help improve the nutritional value and quality of student lunches through our Chefs in Schools program.

Finally, on a personal note, I have three goals. The first is to make more of an effort to get to Manhattan to visit my son. It really isn’t that far to travel but I only made it to the island twice last year to visit. My next goal is to learn a little more Spanish. My daughter has been dating a new guy from Cuba and it would be nice to know what they are taking about behind my back. Lastly, I promised my wife that we would reinstitute our “date night” and be sure to have dinner out at least once a week.

That’s it for me. I think that 2011 is going to be the best year since 2010, and I hope that you and yours enjoy this year to the fullest.

Last month, I sat down to reflect on the months that had passed, and I made resolutions for the coming year. I’m excited about one of my personal goals (more on that later), but I’m REALLY looking forward to implementing one of my professional goals: helping Eat’n Park become a better steward to the community by implementing a full-scale recycling program.

You may not realize it, but the majority of restaurants in the tri-state area (not just Eat’n Park) aren’t currently recycling. At Eat’n Park, we have been recycling cardboard at all of our restaurants since the early 80’s, but we’ve never focused on incorporating bottles and cans into the mix.

One of the biggest reasons for that had to do with having to separate bottles and cans. As of last year, most of the hauling companies (BFI, Allied Waste, Waste management, etc…) required that all recyclable items be separated into individual recycling bins. If you’ve ever been in the back of a restaurant, you know that space is a major concern. Though it may seem like a weak excuse, this was a major hurdle that we just couldn’t get over – until now.

Several of our haulers now allow us to co-mingle our recyclables into one container – which makes recycling simple and easy! So, starting in February, we will have 35 our restaurants recycling not only cardboard, but bottles and cans as well. We hope to have 90% of our locations fully recycling by the end of the year. The other 10% of them will happen as soon as their municipality starts offering a recycling program; if they don’t offer it, we can’t do it.

I’m looking forward to kicking off this program – it’s just one more way for us to reduce our impact on the environment.

Now, on to that personal goal…As I get older it’s harder to stay in shape, so I felt it made sense to learn something new that focused on my health. During the winter months it tends to be a little harder to find a cardiovascular exercise - I enjoy cross country skiing, but snow isn’t always on the ground in Pittsburgh. So, I needed to find a more dependable source of winter exercise.

I live in small town outside of Pittsburgh, and though I pass by tennis courts on my way home from work everyday, I’ve never taken advantage of the facilities. So as I was jogging the other day, I decided to stop and take a closer look. As I looked out at the courts, I noticed a smaller type of court that looked very similar to a tennis court, but it was on an elevated aluminum deck with 12’ high walls all the way around it.

It turns out that the court is used to play platform tennis, which is a cross between tennis and racquetball. The base of the platform has a heating system beneath the deck to melt ice off the surface, allowing you to play outdoors in all weather conditions. Eureka! I knew this sport was for me, since I grew up playing racquetball. So in early January my first lessons will begin. I’m excited about learning a new sport but even more excited about finding something I can do in the winter months.

It’s a new year, which means time for some new resolutions. Last year, it was about healthy eating for me and sticking to the Eat’n Smart menu when I have my daily lunch at Eat’n Park. I did pretty well and have definitely lost some pounds in 2010. Mission accomplished!

So, what’s next? Well, we have something even bigger in 2011 … the 25th anniversary of the Smiley cookie. My resolution for 2011 is celebrate Smiley’s big anniversary as if he has been around for 50 years! The Smiley Cookie was introduced at Eat’n Park in 1986, and today it’s hard to imagine that Eat’n Park actually existed at some point without Smiley. We have lots of plans to celebrate throughout the year (most are top secret right now), but we’ll keep you updated!

As for me personally, I’d like to exercise more in 2011. Eating healthy is only half the battle, and I want to win the war!
